TODAY MY GUEST IS AUTHOR AND HEAD OF THE SOURDOUGH SCHOOL, 

VANESSA KIMBELL. 

SHE JOINS US FROM ENGLAND.


HERE’S A QUICK INTRO ABOUT VANESSA:


AT AGE 9 SHE MOVED TO SOUTH-WEST FRANCE...AND LIVED RIGHT NEXT TO A BAKERY. 

THE MOMENT THAT SHE WALKED INTO THIS BAKERY…. A DEEP CONNECTION WAS MADE….EVERYTHING ABOUT THE CRAFT RESONATED WITH HER IMMEDIATELY. 


AS A TEEN SHE WORKED AT THAT BAKERY.

AT 18 SHE LEFT THE COUNTRY-SIDE…..AND WORKED AT BAKERIES AROUND FRANCE...THEN WENT TO UNIVERSITY IN THE UK.


AROUND THIS TIME SHE BECAME SICK AND TOOK A COCKTAIL OF ANTIBIOTICS…..THAT IN TURN,  DESTROYED HER GUT MICROBIOME…. AND….FROM THAT MOMENT ON…. HER BODY COULD NOT TOLERATE WHEAT. 


SHE HAD TO STOP BAKING….HER PASSION...TAKEN AWAY...OVER-NIGHT.


FOR OVER 4 YEARS…. SHE AVOIDED ALL WHEAT….. UNTIL SHE DISCOVERED THAT SHE COULD DIGEST SOURDOUGH…. WITHOUT ISSUES.  


TODAY WE’LL BE DISCUSSING INDUSTRIAL WHITE BREAD, EATING WITH AWARENESS, BAKING TO NOURISH, AND HOW EVERYTHING IS CONNECTED TO WHAT WE EAT….

IN OUR SOCIETY WE OFTEN HEAR…”UGH I’VE GOT TO LAY OFF THE BREAD….I NEED TO LOSE WEIGHT”......AND IN MY RESTAURANT IT’S NOT UNCOMMON ON ANY GIVEN DAY…. TO RECEIVE AN ORDER…. OR TWO….. OR THREE…. THAT SAYS “NO BREAD”.....OR FOR PEOPLE TO ASK “DO YOU HAVE GLUTEN FREE BREAD?”

I WANT TO DISCUSS INDUSTRIAL WHITE BREAD…. 

IS IT DAMAGING OUR SOCIETY ON A CULTURAL LEVEL ?
